Tasty, quick, and kid-friendly whole food recipe ideas for when you’re in a pinch!

These snack ideas support an anti-inflammatory way of eating. So, you can enjoy some of your favorite flavors while still supporting your body in the healing process. It’s a win-win!

And, I know that changing your diet to eat in a way that is supportive to your body takes work. It takes time, it requires you to think,  and most challenging of all: it requires that you create new habits.

Much of the time, the changes you have to make are relatively simple, but that does not make them easy. Not by a long shot.

When I’m working with clients and students one of the most common questions I get is, “what do I eat?!”. Or, “what will my kids eat?!” It’s hard to change your mindset around what a healthy anti-inflammatory meal or snack actually looks like. Here’s some good news: it absolutely does not have to be complicated.

Now, I have to be totally transparent here; I do not have children (unless you include my furbabies, but they will eat literally anything I give them so I don’t think it really applies here). But, I did my best to throw together a few quick (seemingly) kid-friendly AND healthful recipes for you.

Please do remember that if you have sensitivities to any of these foods, you will want to tweak these recipes to ensure they are not causing inflammation in your body. When it comes to healing autoimmune disease, every body is unique.

Cucumbers with Goat Cheese & Cappacuolo

Ingredients

  • 1 cucumber, sliced
  • 4 oz cappacuolo
  • 4 oz chevre (goat’s milk cheese)
  • Fresh cracked black pepper 

Directions

Simply slice the cucumber, top with goat cheese and cappacuolo, and finish with some fresh black pepper! It doesn’t get much easier than this, my friend!

Side note: many people are reactive to dairy. Whether it is an intolerance or a food sensitivity (wondering what the difference is between an intolerance and a sensitivity? I chat about that in this blog post). However, many people only have an issue with cow’s milk. Even if you have a known sensitivity to cow’s dairy, it’s possible you will tolerate goat’s dairy just fine.

Smoked Turkey, Avocado, and Cucumber Roll-Ups

Ingredients:

  • 6 oz sliced pasture raised smoked turkey breast
  • ½ avocado, sliced
  • ⅓ of a cucumber, cut into sticks

Directions:

Slice the avocado and cucumber. For the cucumber, take about ⅓ of the cucumber and cut it lengthwise into little strips. Place the avocado and cucumber into a couple slices of turkey breast and roll ‘er up!

Soft Boiled Egg With Everything But the Bagel Seasoning + A Side of Fruit

Ingredients:

Directions:

  • Place eggs in a pot and cover with water. Add ¼ cup apple cider vinegar (this makes the shells more brittle and easier to peel).
  • Bring to a boil and boil the eggs for exactly 6 minutes.
  • Remove eggs from pot and place into a bowl of cool water.
  • Once the eggs are cool enough to handle, peel them, slice them, and sprinkle on that EBB!
  • Serve with a side of fruit of your choice.

Sweet Potato Pizza Rounds (with or without cheese)

Ingredients:

Directions:

  1. Preheat your oven to 350 F.
  2. Wash and slice the sweet potato into 1/2 inch rounds. Drizzle with olive oil and sprinkle with salt and pepper. Place in the oven and bake for 20 minutes (or until you can poke right through them with a fork).
  3. Top with pizza sauce, sopressata, and a sprinkle of cheese. These are just as tasty without cheese if you’re avoiding dairy. 
  4. Place bake in the oven for about 5 minutes.
  5. Enjoy!
